GETTING THE FAMILY ON BOARD!
I think my son used to be one of the pickiest eaters in the world. Seriously. When He was small, he was very particular about texture and taste and preferred mostly crunchy crackers and fruit. It was a huge challenge getting him to eat balanced meals. Thankfully, during that time I figured out a few ways to sneak nutrient dense foods into his diet.
OUR JOURNEY
It all started with a simple protein shake. I mixed almond milk with a protein powder, and while my family was a little hesitant at first, they eventually gave it a try. As I learned more about many protein powders on the market, I realized that some contain added sugars, fillers, preservatives and other highly processed ingredients. Since my children were still growing and developing, I wanted to find a more wholesome way to add nutrition to our mornings.
I started experimenting with real, whole foods instead. There was definitely some trial and error (I can’t tell you how many smoothies ended up going straight down the drain because they tasted terrible). But eventually, I found the perfect combination. It was a hit not just with my son, but with our entire family.
VARIATIONS
I am including both the advanced and easy recipe. Some days, us moms prefer a very simple shake because we need to get out the door. As a working parent, I understand not having a ton of time. The trick to making this shake extra foamy and delicious is to blend it extra-long. I usually blend it for about two minutes. The coconut water and avocado make this smoothie foam up nicely. The family loves it!
